Microgreens are the next generation of “superfoods”. They are essentially the seedlings of many well known vegetables, herbs, grains and even flowers. They are grown from seed using multiple mediums from soil and coco coir to various other mediums such as industrial formed hydroponic mats made from natural wood, bamboo and coconut fibers.
They are typically harvested within 7-21 days after being sown. Depending on the variety, they can be harvested at the cotyledon (embryonic leaf) stage or at the first sight of “true leaf” emergence.
When the seeds are first formed, the mother plant packs in all the necessary nutrients to support the initial germination and growing stage of the seedling. Due to this, Microgreens are densely packed with beneficial bio-active compounds and phytonutrients, including but not limited to vitamins, minerals and antioxidants leading to exceptional health benefits.
Studies have found that Microgreens contain upwards of 40x the nutrient density, pound for pound, as their fully grown vegetable counterparts. Each variety has its own delicate flavor, texture, color and nutritional content. Elevate your plate by adding microgreens as a garnish, intermix with other salad greens or simply eat them as is.
